A seriously delicious pasta dish in less than 20 minutes

We love cooking with fresh ingredients and simple flavours, and it’s a bonus when whatever we’re cooking can cover lunch the next day. When we first started dating, Harrison invited me round his mom’s for dinner (he was cooking, not his mom!) and he served this pasta dish after finding a recipe online. I absolutely loved it, and we’ve been making it almost every week since moving in together! By reducing or increasing the amount of cream, harissa or cheese, you can really change up this dish to suit your tastes! Here’s how we make our chicken, spinach and harissa pasta.

Serves 4 (or 2 for dinner and lunch the next day!)

Ingredients 

  • 2 chicken breasts
  • 2 tsp harissa paste or harissa seasoning
  • 1 large tub of double cream
  • 1 pack of cherry tomatoes
  • 1 bag of fresh spinach, washed
  • 1 pinch of chilli flakes
  • Some olive oil for cooking
  • Your choice of pasta – we usually have it with penne or tagliatelle

My photos don’t show the chicken step because we forgot it (pro blogger she ain’t) but you would fry this before the tomatoes.

Method

  1. Stick your pasta in some boiling water with a little salt. This can cook while you’re preparing the rest of the dish.
  2. Chop your chicken into strips and your cherry tomatoes in half.
  3. With a large frying pan on high heat, fry the chicken in a pinch of chilli flakes, salt and pepper. If you don’t like spice, leave the chilli flakes out.
  4. One the chicken is cooked, add all of the tomato halves and cook until soft (but they should maintain their shape).
  5. Add 2 teaspoons of harissa paste to the chicken and tomato pan (3 teaspoons if you like it spicy) and stir, ensuring the tomatoes and chicken are well coated.
  6. Add the spinach and cook until wilted.
  7. Add the cream, stir to mix all of the delicious ingredients together and allow the saucy mixture to bubble away until thick and creamy.
  8. Add the pasta to the chicken and tomato (a little pasta water will thicken it up) and some parmesan. The amount of parmesan really depends on your tastes – I like mine super cheesy so tend to throw in a generous handful!
  9. Season with a bit of salt and pepper to taste and serve with your favourite garlic bread!

It’s as easy at that! I think this is one of the tastiest pasta dishes I’ve ever eaten, plus it’s super cheap to make (ingredients shouldn’t exceed £10) and for that you can cover four people or 2 people twice. This is an awesome midweek meal – let me know if you try it!
